Pea Shoot Microgreen

Pea shoots grown in reused mushroom container. I haven’t had luck growing pea shoots in just water, they tend to rot and the stems get tough. I had better result growing them in coconut coir, but noticed that the shoots were slender and looked like that they could benefit from some added nutrition. This time, I used our home made compost, which is decomposed woodchips from our last year’s tree trimmings. It worked great. The shoots are healthy, vibrant and tender.

Avocado Pesto Zoodles

Recipe. Used lime instead of lemon as we think the flavor of lime goes better with avocado. Didn’t need to add water as the avocado is of perfect ripeness. I have in mind a couple of variations to try: with hemp seeds, with soaked almonds, with Brazil nuts.
